On one memorable trip to the Champagne region in France I found myself below ground in one of the largest wine cellars I have ever visited - a cavernous vault that appeared to go on for miles. As we made our way past the thousands of sleeping bottles, stacked horizontally in neat rows, we approached the reserve cellar, a dark room full of wines from the 19th century.
