While store-bought salad dressing is an undeniable convenience, it's also a frequent salad-killer—there's just no comparing a bottled vinaigrette to a good, basic homemade one. To save myself the hassle of having to whip up dressing when I'm hungry, I always keep a batch of my favorite lemon vinaigrette on hand. Those days happen at least once or twice a week, so I find myself browsing for easy vegetarian dinner recipes quite often. In the winter months, I tend to gravitate towards nourishing Indian and Thai curries that warm me from the inside out, but I also crave pizza and veggie burgers from time to time.
