Changes in the Physicochemical Indexes of Nutmeg during Storage Figure 1 shows the changes in α-pinene, β-pinene, elemicin, and dehydro-di-isoeugenol contents in nutmeg samples at different storage times. Nutmegs stored for 0 months contained 0.17% α-pinene, 0.49% β-pinene, 0.08% elemicin, and 0.29% dehydro-di-isoeugenol.
