Apparently, I’ve been doing this newsletter monthly for a little bit over six years. I started it at a time when I was between jobs, and when I thought maybe I would get into food media, so the combination seemed like a good time to try getting some structure in my life on this front. Since then, I’ve worked at a few different places, and moved into design media, not food media.

When feeding vegetarians and people who are gluten-intolerant, one must try to avoid the easy meal fallback: pasta. Yet when searching for a quick go-to, it’s often the first thought that comes to mind; oh, I have x, y and z and all of that can mix together on a base of penne. There’s something about a deeply simple recipe that has an allure to it. There are so few ingredients, and the steps are so limited, that it feels like magic when it comes together better than things you could have spent more time on. This is how I’d thought about Nina’s Beans, a recipe from the cookbook that has basically nothing in it, but was allegedly written by our family friend Nina, herself a great cook. I’d always wondered about them: these beans, I thought, must be incredible.
