1.To make the pastry, place the flour and butter in a food processor and blitz until it resembles breadcrumbs. Add the icing sugar with a pinch of salt and pulse until combined. Add in the egg yolk with 2-3 tbsp cold water and pulse to bring the mixture together. This makes enough dough for 4 cases - you can bake the tarts then store in an airtight container for a week or freeze them for another occasion.

1. Place the strawberries in a food processor and blitz to roughly chop. 2.Add in the remaining ingredients (except the desiccated coconut) and blend to a thick paste. 3.Taste the mixture, adding in an extra date for sweetness if required or a little maple syrup. 4. Chill the mixture for 20 minutes to firm up, then shape into balls. 5.Roll in desiccated coconut if using. 6.Store in an airtight container in the fridge for 2-3 days or freeze.

Melt the different chocolates in separate bowls by placing in the microwave for 30 seconds at a time, stirring and returning for repeat 30 seconds slots until smooth and glossy.
