For the pastry, sift together the flour, curry powder, turmeric and salt into the bowl of a food processor. Add the butter and pulse until the mixture looks like coarse sand. With the motor running, gradually add 4–6 tablespoons of ice cold water until the dough starts to come together. Add just enough water to bind the dough. Roll the dough into a ball and wrap in cling film. Leave to rest in the fridge for 30 minutes.
