Six years ago, Saint-Germain started humbly, with an interior constructed largely by its chef/owners and a focus on wine and small plates. Over time, partners Trey Smith, Blake Aguillard, and Drew Delaughter transformed the restaurant, set in New Orleans’ Bywater neighborhood, into a proper bistro, and, now, Saint-Germain is a tasting-menu-only restaurant serving just 30 guests a night.
