Wiltshire Pantry, a popular bakery in the Highlands, serves a popular weekend-only brunch menu. Owner Susan Hershberg says the location is busier than ever. Popular menu items croissants, poptarts, cookies, and brunch items like a black bean tostada. If it’s a Saturday morning at Wiltshire Pantry, things start out quiet. You have your pick of the full pastry case and you can probably still snag a coveted spot by the window or on the small patio out front. Within minutes, though, the pace picks up.

Bad Ass Coffee of Hawaii, a Hawaiian-style coffee chain, is opening three locations in Louisville. The first Louisville location is expected to open in early 2026, owned by local franchisees Daniel and Nicole Lenhardt. The menu includes various coffee drinks, teas, and food items like malasada doughnuts and sandwiches. Louisville’s coffee shop scene is catching a new wave. Bad Ass Coffee of Hawaii, a growing chain serving Hawaiian-style coffee, is expected to open three locations in Louisville.

YachtSea opened recently in Butchertown. The bar's features a menu of oysters, fancy hot dogs, and "boat drinks."Owners JC Denison and Leslee Macpherson aim to provide a "highbrow and lowbrow" experience. A new Louisville bar serving hot dogs, oysters and nautical vibes is now open. More than a year after setting sail as an occasional pop-up at The MerryWeather, 1101 Lydia St., YachtSea recently unveiled its own Butchertown digs.

Chef Nick Taylor started Counter Service, a pop-up vendor serving food weekly at The Merryweather, in 2023. Counter Service offers popular Thursday burger nights and dim sum on Sundays. Counter Service is considered the only dim sum pop-up in Kentucky. The secret is getting out. More and more people know to go to The MerryWeather on a Sunday evening, when bamboo baskets and plates of lo mein and oversized smashburgers appear mysteriously from the back.
