Normally I use charcoal and logs – charcoal for heat, logs for smokiness. Make sure you use plenty of charcoal. You want the coals to get super hot and then to turn grey before you start cooking your food. To maintain a constant heat, keep topping up the coals as you go.

Alfajores were one of my favourite treats from my mamita goya (grandmother). They were special as she used to make them using her homemade dulce de leche with whisky, and to this day they are the best I have ever tried.
