Tucked away in a Troy strip mall along Crooks Road rests Sourdough Ida, one of the few bakeries devoted entirely to sourdough creations. While the building is quiet, co-owner Edmond Marena is up at 3 a.m. kneading, baking and selling fresh warm sourdough goods, Monday through Saturday. “If I knew what time bakers started, I would’ve thought twice before I signed the contract with my wife,” Marena said, laughing.
