Well, the weather is warmer. Cooking inside makes the house hot, so go cook on the grill! 1 lb. ground beef or turkey1/3 c chopped water chestnuts¼ c chopped green pepper2 green onions, chopped1 T brown sugar2 T water1 T lemon juice1 T soy sauce½ t ground gingerVegetable cooking spray4 sesame bunsKetchupGarnish of green onionsCombine the first nine ingredients. Shape into four patties. Coat a grill with cooking spray. Place on rack. Cook five minutes on each side or until done.

You’ve got to try this one. It’s so good. 8 skinned and boned chicken breast halves½ t salt¼ t pepper3 T lemon juice½ c mayonnaise1 c fine chopped celery1 t dried tarragon (optional)1 lb. fresh spinach3 medium tomatoes cut in wedgesSprinkle chicken breast with salt and pepper. Arrange chicken in 9x13 dish. Sprinkle chicken breast with lemon juice. Bake at 375 degrees for 20 minutes. Combine mayo, celery, tarragon and set aside. Remove stems from spinach, wash and pat dry.

This would be good if you are on a tight schedule with kids playing sports. Cook ahead and dinner is ready when you get home. 4 boneless chicken breasts1 pack Ranch seasoning mix1 pack au jus gravy mix½ c butter5 – 6 pepperoncini peppersSalt and pepper to tasteFresh parsley for garnishPlace chicken breasts in bottom of crock pot. Sprinkle with Ranch seasoning and gravy mix. Add butter on top. Place peppers around the chicken. Sprinkle salt, pepper.

This would be so good for an Easter sunrise breakfast. For home, you can just half everything. 8 to 10 servings1 pound turkey or chicken sausage, cooked and crumbled1 bag hash browns, thawed10 large eggs1 ½ c milk1 c shredded cheddar cheese½ t salt½ t pepper½ t garlic powder½ t dried oregano½ c diced green peppers½ c chopped onion¼ c fresh parsley¼ t onion powderPre-heat oven to 375 degrees. Grease a 9x13 dish. Cook meat. Remove and drain. Saute the vegetables for 2 to 3 minutes until soft.

This is an old one. My mom used to make this all time. I made it, but just not as good as hers. It is such an easy one. 2 squares (2 oz.) semi-sweet chocolate½ c butter (1 stick)1 c sugar2 eggs, beaten1 – 9” unbaked pie crustPre-heat oven to 375 degrees. Melt the chocolate and butter together in a heavy saucepan over low heat. Remove the pan from stove. Add sugar, then the eggs. Beat well. Pour the filling in pie crust and bake 25 minutes. Serve warm or cold with ice cream or whipped cream.
