Ageing wine underwater has become a hot topic in recent years. Bottles discovered on the seabed among long-forgotten shipwrecks provided inspiration. On opening, the wine was surprisingly fresh, a testament to the ocean’s powers of preservation. Several producers have since explored how the ocean might be utilised during the winemaking process. The most recent winery to release the result of its underwater vinous experimentation is Subsea Estate in Western Australia.

90 $60 Drink by: 2025-2030 Macerated red and black berries, some sweet wood spice and vanilla, potpourri plus bonfire smokiness and gunflint. It’s rather seductive yet seems a little forward. The palate is soft and fleshy, the edges in soft focus. I adore the shape of the acidity, lifted and songlike. The vanillin fruit compote notes charm and offer fragility, though tannins melt from the palate a little faster than hoped. There’s plenty to enjoy if drunk in its youth.

For a 2023 wine, this is rather forward in colour, but the nose and palate more than make up for any quibbles. What a delectable nose. Heavenly, in fact. Orange blossom, kerosene, wax, toasty hay, vanilla, and some white gum honey sweetness. The palate confirms sweetness in this off-dry iteration, but there’s nothing cloying. Perfectly balanced with the intricate acidity. Despite the fruit’s sweetness, there’s a curry leaf savoury core and finish.

93 $50 Drink by: 2025-2030 A touch of lanolin, wet stone, fresh cut pineapple, ripe peach, lemon skin and cooling spice. Crushed, blanched almond note on the finish. Fine acidity tiptoes across the palate, at an even keel with the delicacy of fruit. A clarified butter feel on the palate and the fruit is in the custard apple, lemon curd scope. Pretty delicate white florals float through on the breeze. A finer style of Chardonnay, from a cooler climate.
