    Chef notesI love this recipe because it's so versatile and can be made with anything you have leftover in your fridge. Pick a meat, a veggie and a cheese, and you're good to go! I also love making this casserole the night before because it reheats so easily the next morning for a quick breakfast or lunch. It's also an easy thing to make ahead for a class breakfast (it's a nice gluten-free alternative to the doughnuts and bagels that are usually brought in!).

    RecipesChef notesI’m not a thick-crust pizza girl, but I do love a warm focaccia bread with ooey gooey toppings. When it comes to Buffalo chicken pizza, there are two camps: use the Buffalo sauce as the sauce on the pizza or use red sauce but top it with Buffalo chicken. I’m in the red sauce camp — but I don’t love Buffalo chicken pizza. Enter Buffalo chicken focaccia … it somehow all comes together perfectly.

    RecipesChef notesI love making muffins for the boys! I can make a large batch and freeze any leftovers for a quick breakfast or snack, although there are rarely leftovers. I try to work in a little extra nutrition when I can, but I also want it to taste yummy so you’ll notice the sugar and chocolate chips, along with the bananas, unsweetened applesauce and pumpkin instead of oil. Banana bread is so versatile, so this is yet another spin on an old favorite.

    I love quick and easy weeknight meals that don’t take a lot of prep work. Lately, I’ve been obsessed with Caesar salad, but I can’t get my kids to eat a salad. So instead, I use Caesar dressing and a Parmesan-breadcrumb topping on some chicken to get a similar effect — and my kids love it!

    Chef notesLunch is the bane of my existence. It’s my least favorite meal to eat, and it stresses me out figuring out what to make the boys every day. They’re happy with cheese and mayonnaise sandwiches, but I wanted to figure out something a little “fancier” that I would enjoy eating, too. So I put my lazy spin on a croque monsieur and came up with these sweet and salty sandwiches. We use Schar gluten-free croissants, but you can use whichever kind is your favorite.
