A fresh burst of seasonal ingredients Although some people complain about not having four seasons in Louisiana, I still look forward to spring. I’m not talking about little birds tweeting and the breakthrough of crocuses in the melting snow. For me, it is about the food. There are some foods and dishes that I miss during the winter.

Bresaola Salad with Arugula and Parmesan¼ pound bresaola (cured beef), thinly sliced6 tablespoons preserved lemon vinaigrette, divided6 cups lightly packed fresh arugula1 ½ teaspoons Aleppo pepper1/3 cup finely grated Parmesan cheese1. Shingle the slices of bresaola in an overlapping layer on a large plate or serving platter, and drizzle 2 tablespoons dressing all over. 2. Toss the arugula with the last ¼ cup dressing and the Aleppo pepper, then pile the greens in a big tuft over the bresaola.

A simple supper for the season When I was a youngster, my family celebrated Labor Day weekend by gathering for what we considered was the last holiday of the summer. Mama and Papa’s menu for the day never changed. Barbecued chicken, cooked long and slow on the locally made grill fashioned with a 55-gallon barrel. The aroma tickled our taste buds.
