SINGAPORE - I last met Singaporean chef Marcus Leow over two years ago, at the now-defunct Magic Square restaurant. Back then, his thoughtful use of underrated local ingredients – from pink guava to starfruit – alongside Japanese produce already shone through. Since end-2024, the 33-year-old chef joined nasi lemak specialist The Coconut Club as its head of research and development, and now takes on the additional portfolio of head chef at its sister restaurant Belimbing.

Despite recent news of a global matcha shortage, the thirst for the popular Japanese powdered green tea is going strong. In the past year, the top three matcha items ordered on Grab Singapore’s GrabFood platform were drinks – matcha latte, matcha frappuccino and Uji matcha. Matcha ice cream, mochi and cakes also made its top 10 list. The Uji area in Kyoto is known for its high-quality tea, regarded as one of the best in Japan.

SINGAPORE – After the recent exit of several food and beverage (F&B) tenants at the National Gallery Singapore, it announced – in a statement on April 8 – two new dining concepts helmed by veteran local chef Damian D’Silva. Slated to open in September, the museum will be home to all-day-dining cafe Rempapa, known for its multicultural Singaporean cuisine. It will relocate from its current location at Park Place Residences at PLQ in Paya Lebar.

SINGAPORE – For a peaceful night out off the bustling Orchard Road belt, head to The Standard, Singapore, located next to Shangri-La Singapore in Orange Grove Road. The 143-room hotel is home to Cafe Standard on the ground floor, which offers an all-day-dining menu, and its main restaurant on the second floor – Kaya at The Standard, which includes its Kaya Bar for drinks. To be clear, Kaya’s name has nothing to do with the sweet coconut spread.
