Nick-San has been a labor of love, and the sea, by co-owners Ángel Carbajal and Masayuki Niikura, for the past three decades. Carbajal, originally from Michoacán, México, and Niikura, a chef from Tokyo, Japan since the 1970’s, got together and opened Nick-San in 1994 – the first Mexican-Japanese fusion restaurant in Los Cabos.

In 2006, Juan Carlos Del Rio already had 24 years of experience working in sales and marketing for hotel chains when he co-founded the award-winning destination management company (DMC), EPIC, in Los Cabos. His partner, Manuel Carrera, manages the Cancun Riviera Maya offices – where they are currently celebrating the 35th anniversary.

Born and raised in Mexico City, Chef Juan Pablo Loza has quite a few accolades to his name. He was named Best Mexican Young Chef in 2005, he worked at several of Mexico City’s most celebrated restaurants, including Le Cirque, Ciboulette, and L’Olivier, and he was named as “The Rule Breaker” in a list of the top 40 food-centered hotels. Chef Loza says he has always enjoyed using modern techniques to create experiences with pre-Hispanic influences.
