Cole crops are cool season vegetables in the Brassica family like cabbage, kale, collard greens, broccoli, cauliflower and Brussels sprouts. These veggies can grow into the warm season, but they get progressively harder to grow. Warmer weather can cause the plant to bolt and a heavy rain can cause cabbage and Brussels sprout heads to split. Plus, there are all the insects that love to munch on cabbage. Cole crops transplanted in February can be harvested before harmful caterpillars arrive.
