Before the war broke out in Gaza, 26-year-old Nisreen Shehade was working in a dental office and ran a decently successful baking business on the side. She sold her signature chocolate brownies and cookies to local customers in aesthetically-pleasing cardboard treat boxes labeled with her small-business sticker, “Nisreen’s Diary,” and tied with a simple piece of twine. Born and raised in Gaza, Shehade says baking was her passion. Now, it brings the self-taught chef no joy.

Helal Kaoud hugged her father and brother goodbye in late September as they set out on a trip to visit relatives in Gaza. At the time, she had no idea the long-awaited vacation would thrust her family into a nightmare. Esam Kaoud, a 52-year-old California resident, was taking his 20-year-old son, Ameer Kaoud, to see the family’s homeland for the first time.
