The three ice-crusted salmon fillets had been in my freezer for more than a year, squished next to an unopened package of chicken that was similarly well past its sell-by date. I excavated my cryogenically preserved proteins during a recent attempt to clean out my refrigerator. But rather than tossing them straight into the trash, I thawed them.
