Vegas Unstripped, the festival celebrating top Las Vegas chefs and barkeeps, returns for its sixth running from 6 to 9 p.m. April 27 at the Palms. Organizers Eric Gladstone and chef James Trees recently announced a confirmed complement of about 30 chefs and half a dozen mixologists. These food and drink professionals represent independent establishments (mainly) and Strip properties.

The latest dispatches from the Las Vegas (and Wonderland) restaurant front:■ Prince St. Pizza of New York City, which debuted its first Vegas location in December 2023 in the food hall at Durango, is launching a second shop in July, this one at 2390 E. Serene Ave., Suite 400, in Henderson. The new restaurant will encompass about 2,400 square feet. The original Prince St. opened in 2012 in the Nolita neighborhood of Manhattan.

Kyle Cunningham is well on his way to being one of the coffee house kings of Las Vegas. Cunningham is set open a third location of The Coffee Class, in May on West Sahara Avenue. The new shop joins two Coffee Classes in Henderson (opened in 2019 and 2022) and the Almond & Oat Coffee House, a nondairy spot that debuted in 2023, also in Henderson.

The Strip is back. Three food and beverage professionals from Las Vegas were named finalists in the 2025 James Beard Foundation Restaurant and Chef Awards, often called the Oscars of the food world. The foundation announced the finalists in more than two dozen regional and national categories on Wednesday.

Pool season begins in Las Vegas, and these legendary L.A. dogs are back in town and ready for wet work. Pink’s Hot Dogs, which the Pink family started in 1939 as a cart on North La Brea Avenue in Hollywood, is returning to Vegas, with stand-alone restaurants at two area water parks. The Pink’s at Cowabunga Bay in Henderson launches April 19 when the park opens; its sibling at Cowabunga Canyon in southwest Las Vegas debuts May 3 when that park starts its 2025 run.
