1 INTRODUCTION Americans consume on average 3400 mg of sodium per day—nearly 50% more than the 2300 mg daily limit recommended by Dietary Guidelines for Americans for people 14 years of age and older (USDA & HHS, 2020). Consuming too much sodium can raise blood pressure, which is a major risk factor for heart disease and stroke (AHRQ, 2018). Hypertension is the single most important and modifiable risk factor for cardiovascular morbidity and mortality worldwide (Oparil et al., 2017).

What is Climate Smart Agriculture? I think Climate Smart is really about soil and water management. It’s interesting being here in Southern California, which right now is in the middle of an atmospheric river. That is one of those symptoms of our climate challenges.
