My mom made every single one of my birthday cakes when I was growing up, and from ages 6 to 11, it was always a Jell-O poke cake. I loved the bright berry-colored stripes that ran through the cake, and the fruity flavor in each bite. Mom would slather the top with frozen Cool Whip or her own whipped cream frosting.
