Preheat oven to 475°F. Line a large baking sheet with a Silpat baking mat or parchment paper. Set aside. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Set aside. In a medium bowl, combine cold buttermilk and the slightly cooled melted butter. Stir with a spatula until combined and small clumps form. It is ok if the mixture is lumpy. Stir in the vanilla and almond extracts.

Place the pork tenderloins in a Ziploc bag (or a large bowl). Set aside. In a small bowl, whisk together the olive oil, garlic, shallot, lemon juice, Dijon, honey, parsley, rosemary, thyme, salt, and pepper. Pour the marinade over the pork. Seal the bag and make sure the pork is well coated. If you are using a bowl, cover with plastic wrap or lid. Place in the refrigerator and let the pork marinate for at least 1 hour or up to 12 hours. When ready to cook, preheat the oven to 425 degrees F.

Gather the ingredients and preheat the oven to 400 degrees F. Use a sharp knife to cut off the woody ends of the asparagus. Alternatively, you can snap them off. They will bend and snap in the right place. Discard the ends. Place the asparagus spears on a large baking and drizzle with olive oil. Toss until well coated. Season with salt and pepper. Roast for 10 to 15 minutes or until the asparagus is tender, but still crisp. Time will vary depending on the size of your asparagus spears.
