Coffee farms come in all shapes and sizes. According to the Fairtrade Foundation, however, 25 million smallholder producers grow up to a staggering 80% of the world’s coffee supply. The term “smallholder” is often overused in specialty coffee, but generally refers to producers who grow coffee on an area five hectares or smaller. As a result of much lower yields, an estimated 5.5 million smallholders live below the international poverty line of US $3.20 per day.

Baristas play such an integral role in specialty coffee. Without skilled and passionate staff, coffee quality would take a huge hit – and cafés and roasteries would struggle to operate and stay profitable. But it’s fair to say that baristas haven’t always received the fair recognition they deserve for their hard work. Seen by some as a “stopgap” job, the role of the barista isn’t often considered a career – unlike working in roasting or green coffee trading, for example.
