There's no wrong way to eat a potato, but there is a better one, depending on the dish. Some potatoes break down into fluffy clouds that are great for mashing. Others stay firm and structured, built for salads, flaky skillet sides, or a nice tray of garlicky roasted wedges. And then there are those that surprise you with a deep buttery flavor, cool jewel tones, or the kind of golden crust you thought only restaurants could pull off.

Ranch dressing is a staple in many kitchens, drizzled over crisp salads, served with crudités, or used as a dunking sauce for pizza crusts, fries, and chicken wings. This iconic condiment was invented in the early 1950s by Steve Henson, a plumber working in Anchorage, Alaska. Looking to enhance some meals for his hungry crew, he began mixing up a blend of buttermilk, mayonnaise, onion and garlic powder, black pepper, and dried herbs.

I’m kneeling in my bedroom, inside our small concrete house in Verdellano, a neighborhood in the mountain town of Tabonuco, Puerto Rico. It’s 1995, I’m thirteen years old and there is a shootout between two gangs just outside my window. My mother yells, “Al piso!” but I take a moment to pray before crawling under my daybed. “Diosito please make it stop, todo poderoso.” My hands touch the cold concrete wall and then slide down to the floor and I clamp a dusty Rainbow Brite doll to my chest.

“My heart ached. Learning more about him undeniably changed how I experienced his music—it felt darker and sadder, and I became protective of both the delicate sound and the fragile artist behind it. ” —  @MelissaWriting https://t.co/sKGkeqkMVd
