    While I have been soaking dried chickpeas overnight in water with a little baking soda and then simmering them for a couple of hours in water with a little more baking soda, I hadn't tried it with canned beans and it's a game changer when time is of the essence. Just dumping the cans of chickpeas into a food processor can lead to a thick, stodgy paste. Simmering them in baking soda-laced water is the first step to light, ultra-smooth, ultra-creamy hummus.
