1 Introduction Kimchi, a traditional Korean fermented food, is globally recognized for its health benefits and unique flavor (Chang et al. 2011). Kimchi is typically prepared by fermenting salted vegetables, such as cabbage, radish, or cucumber, with a seasoning blend containing red pepper powder, garlic, and green onion. It was officially recognized as a fermented vegetable product in the Codex Alimentarius (CODEX STAN 223–2001) in 2001 (Lee et al. 2017).

The kokumi identified in fermented foods such as doenjang, soy sauce, etc. is a sensation characterized by thickness and mouthfulness, etc. In this study, we found that there was a difference in the best estimated thresholds (BETs) depending on pH in some kokumi peptides, suggesting that pH levels in doenjang and other pastes may be involved in the kokumi recognition threshold. In other words, pH levels may alter the perceived kokumi flavor in some kokumi peptides.

This study provides practical insight into the use of umami substances to enhance the sensory quality of traditional Korean fermented foods. The findings demonstrate that monosodium glutamate (MSG) significantly improves consumer perception of kokumi and overall liking in doenjang soup, without increasing salt content. Food developers may consider MSG as an effective flavor enhancer to improve the palatability of fermented products while supporting sodium reduction strategies.
