1 Introduction Kimchi, a traditional Korean fermented food, is globally recognized for its health benefits and unique flavor (Chang et al. 2011). Kimchi is typically prepared by fermenting salted vegetables, such as cabbage, radish, or cucumber, with a seasoning blend containing red pepper powder, garlic, and green onion. It was officially recognized as a fermented vegetable product in the Codex Alimentarius (CODEX STAN 223–2001) in 2001 (Lee et al. 2017).
