CHARLESTON — Theresa Scotto remembers the feedback shortly after Pelato opened in Nashville. “This isn’t what we had in Italy,” diners would say. They were right. Meatballs with tomato sauce. Guanciale-stuffed arancini. Chicken Parmesan, layered with tomato, basil, Parmigiano Reggiano and fresh-made mozzarella. Potato croquettes that Scotto would fry two at a time with her mother around the holidays in Brooklyn.

SINGAPORE — Ceiling fans flutter napkins through a tight tiled alleyway lit by fluorescent lights. They hang from pipes that curve above bright signage flaunting hokkien mee, braised pig’s trotter and duck rice. It’s hot, sticky and cramped in the indoor-outdoor food court. People clutch trays, chopsticks, purple bowls, spoons, little plastic bags with handles to hold their celery juice and boba tea. Most backless seats in the two-story Singapore compound are occupied.

Sam Norton would leave the door to his lab inside the Rita Liddy Hollings Science Center open while developing what would eventually become Heron Farms, the world's first indoor vertical saltwater farm.
