They are so simple and easy to make with a handful of ingredients. High in protein from the cottage cheese, and the perfect breakfast to kickstart your day. My kids love waffles. I make either waffles or pancakes every Sunday because it is something they always look forward to.

Peel 1 medium yellow onion and 2-3 large cloves garlic, then crush the garlic and dice the onion. Heat 2 tablespoons extra-virgin olive oil in a heavy-bottomed saucepan over medium-high heat. Sauté onion and garlic for 4-5 minutes. Crank open a can of 28 ounces whole peeled tomatoes and pour into the pan. Stir in 1- 1/2 teaspoons dried oregano, red pepper flakes (optional if you want to make it spicy, add 1 tsp), and Salt and pepper.

Preheat the oven to 350°F and line a sheet pan with parchment paper. In a bowl, add the 1 1/2 cups self-rising flour , 1/4 teaspoon garlic powder, chopped jalapenos (using half of the 1 medium Jalapeno), and 1/3 cup shredded sharp cheddar cheese. Toss to combine. Next, add in the 1 cup Plain Greek yogurt. Using a spatula, mix well until a dough is formed. About one minute. Lightly flour a surface with flour and transfer the dough to it.
