Preheat the oven to 350°F and line a sheet pan with parchment paper. Peel and chop the 2 Large sweet potatoes into 1/4 inch cubes. Place them on the sheet pan, drizzle 1 tablespoon of the 2 tablespoons olive oil, Salt and pepper, and 1 teaspoon cinnamon. Using your hands, toss to combine. Bake for 18-20 minutes or until crispy and cooked through. Meanwhile, cook the beef. In a pan, add olive oil and sear the 1 pound lean ground beef until it is no longer pink. About 2-3 minutes.

Boil the 10 ounces gluten-free spaghetti or fettuccine pasta in salted water according to the package instructions. Once cooked to al dente, drain and set aside. Heat the 1 tablespoon olive oil in a non-stick skillet over medium heat. Season the 4 salmon fillets with Kosher salt and pepper and cook the salmon for 5-6 minutes per side, until golden. Set aside and cover to keep warm.

Preheat your air fryer to 375°F. Place the 1.5 pounds lean ground beef in a large bowl, and add the rest of the ingredients. (1/4 cup almond flour, 1/4 cup grated Parmesan, 1 large egg, 2 garlic cloves, 1 teaspoon dried oregano, chopped parsley, and Kosher salt and pepper) Thoroughly mix to combine, then form into 1 spoonful of meatballs. Arrange the meatballs in the basket of your air fryer and cook for 10-12 minutes, shaking the basket halfway.
