The effects of saturated fatty acids with different chain lengths (C12, C14, C16, C18) on the structure and digestibility of type 5 resistant starch (RS5s) were investigated. The complexing index (CI), structure, phase transition temperature, digestibility and evaluation glycemic index (eGI) values of RS5s were determined.

3. Results and Discussion 3.1. Effect of HMT on the Morphology of SPSFigure 1 shows the scanning electron microscope and polarizing microscope images of SPS before and after HMT. For starch, its internal structure includes two major regions: crystal and amorphous. The granule structure information of SPS could be obtained by scanning electron microscopy and polarized cross observation.
