    All About UbeA yam native to Southeast Asia, ube (pronounced ooh-bay) has light lavender to deep violet flesh with a tough, barklike exterior. It can be difficult to find fresh in the U.S. (some Asian markets carry it), but ube powders and frozen grated ube are increasingly available. While botanically different, purple sweet potatoes are a good ube substitute—you can add ube extract to the jam and/or batter to emulate the flavor.
