Pasta is so essential to the Italian identity that a whole canon of rules has developed around it: what wheat should be used, how much...

Our approach to Valentine’s Day and romance in general varies considerably, according to our mood and the demands of our jobs. When it comes to a romantic meal, we can plan ahead, make an effort and present something a bit special or, more often than not, it’s a mad dash to the kitchen and a ready, steady, cook approach. Duck legs will probably require a trip to the butchers, but the potato hash can be made with things you probably have at home already (or can easily find at the corner shop).

This is what a winter party is all about: a big pot you can place at the table with a stack of bowls and a ladle; something that’s not expensive, that’s easy to prepare, and that can be made well in advance. Most importantly, though, this pot is exploding with deeply satisfying flavour, and will accommodate almost everyone: there’s no gluten or nuts, your vegan and vegetarian friends can dig in, and carnivores won’t feel cheated, either. Every palate is catered for, everyone is welcome.

If there is one thing we love, it is a low-effort, high-impact dish, and if it can feed a crowd, even better. This one is a triumph of the genre: all the lamb shoulder requires from you is a quick (but potent) marinade and a long, leisurely soak in the oven with an occasional baste. The salsa joins it in the oven – indeed, on the same tray – and just needs some coarse chopping afterwards, leaving you plenty of time and energy to prepare a sharp, colourful, showstopping salad.

Don’t let a fear of deep-frying keep you from making this herby falafel recipe. The process is less intimidating than you might expect and yields perfectly seasoned golden brown falafel that’s naturally gluten-free and fit for a party—even if you choose to eat them all yourself throughout a week’s worth of lunches. Falafel is all about a balance of textures. That starts with dried chickpeas or garbanzo beans that are soaked but uncooked. This is not—we repeat, not—the time to use canned chickpeas.

We all like our home to be a sanctuary, a haven from our working life, where we can unwind a bit. We struggle. Our flat has become an extension of our work, with the constant washing of chef’s whites and trousers; our kitchen equipment and store cupboard always in danger of finding their way to work; our dining table covered with paperwork and recipes scribbled on scraps, waiting to be typed.
