My 10-year-old has been tasked with slowly toasting dried pasilla and ancho chiles, sesame seeds, pumpkin seeds and almonds over the comal griddle. They’re all going into the mole negro we’re making as part of our cooking class with chef Victor Palma, the head of all things culinary at Rosewood’s Las Ventanas al Paraiso in Cabo. Chef Victor insists we sample a piece of the Abuelita chocolate that’s going into the sauce, too.

A melting pot of cultures and neighborhoods, New Orleans is multilayered and fascinating. From the grand homes of the Lower Garden District to jazz along Frenchmen Street, there’s much to enjoy and appreciate. Though it will never shed its party town reputation (Mardi Gras!), the Big Easy has grown up quite a bit in recent years, with lots of art museums, inventive fine dining and luxe digs to rest your head.
