The Beacon Newspapers is a family-run organization focused on delivering informative and engaging content for individuals aged 50 and above, along with their families. The publication was established in 1989 by Stuart Rosenthal, who serves as the publisher, and his wife Judy, the associate publisher. Their free monthly print editions reach audiences in the Greater Washington (D.C.) area, Greater Baltimore (Maryland) area, and Howard County (Maryland). In January 2012, they expanded their reach beyond the mid-Atlantic by introducing a fourth edition that serves the Coachella Valley, home to Palm Springs, California.

    Fajitas are a sizzling spectacle, but we wanted a recipe that was more about flavor than theater and used only one baking sheet. We chose flank steak, preferred by tasters for its beefy flavor, tenderness and availability. Since we couldn’t sear it on a baking sheet in the oven (even at a hot 475 degrees), we relied on a potent, dark-colored spice rub to make up for the missing flavor and color. A mixture of chili powder, brown sugar, salt, and pepper did the trick.
