Today’s selection focuses on red wines that will pair well with the complex and robust flavours of this versatile meat. As always when pairing meat with wine, it’s useful to consider the cut itself — for example, is it fatty or lean? — as well as how its being cooked, and taking all those elements into account. A slow-cooked, fattier cut like a lamb shoulder will welcome a wine with decent acidity to cut through all that richness.

Today’s recommendations would work with roast fish, birds or white meats. Roasting turbot whole on the bone is a seriously delicious and surprisingly simple way to maximise its flavour, maybe with some roast lemon, fennel bulb and fresh herbs in the tray too; likewise for whole sea bream, sea bass or hake, or bone-in steaks of bigger fish like halibut or cod.

We’ve witnessed a lot of muscle-flexing lately. While this ascendant bro culture clearly does not represent all men, it’s an exhausting sight that begs some rebalance to cheer us back up. Today’s column rounds up wines worthy of Mother’s Day gifting. Each highlights enterprising women of the wine world. Some did indeed take over. Some collaborated with the teams around them. All wielded their agency well, and leave their world a better place for it.
