1. IntroductionClassical surfactants are substances formed using a hydrocarbon chain attached to an ionic polar group. Of these, the oldest used are fatty acids which are biomolecules that make up the main components of fats and consist of a carboxylic acid group attached to a hydrocarbon chain that can be of different lengths and degrees of saturation. However, other naturally occurring compounds are able to form amphiphilic systems, and, therefore, its aggregates are cholesterol and vitamin E.
