In Brazil, meat carries an important cultural value even if from an environmental perspective its production is related to negative impacts. We explored Brazilian meat consumption over time, according to income groups from the perspective of the food inequalities and food justice and we analyzed its impacts on the environment.

As Chicago icons go, Bing Bread might be right up there with Michigan Avenue and Wrigley Field — at least to people obsessed with eating, which, in this town, is legion. If you never got a taste, the dish, invented at Parachute, a 50-seat restaurant in Avondale, is an adaptation of a traditional Chinese scallion pancake rendered deliciously unrecognizable. The round, yeasted loaf is fortified with potato and cheese, stuffed with bacon, sprinkled with sesame seeds and baked to a mahogany shellac.

Paradise Dynasty is known for its rotating xiao long bao flavors. The variety and odes to Singapore are what set the xiao long bao restaurant apart from its competitors. (That, and Paradise Dynasty’s flaky radish stuffed pastry, which is extremely popular with South Coast Plaza influencers and food writers.) Paradise Dynasty’s U.S. flagship location launched a collaboration with Phởholic on March 4 to produce phở xiao long bao, or phở XLB. Since then, it’s been selling out daily.

Great Maple co-owners Amanda and Wing Joe Ho stand together admiring the black-and-white images of Pixar characters hanging on their restaurant’s walls. One picture is a contemplative Miguel from “Coco” perched next to his loyal pet dog, Dante. On another wall is Jessie the cowgirl from “Toy Story.” The pictures, which were originally slated for the Pixar office walls, are prominently displayed at Great Maple, the ground floor restaurant inside the new Pixar Place Hotel.
