This easy version keeps it simple with tinned tuna for a quick and delicious meal. To make the dressing, whisk together the vinegar, mustard and anchovy fillets with a little salt and pepper then whisk in the oil. Set aside. To make the salad, place the red onion in a clean small bowl and massage with a little salt.

• None To make the meatballs, put all the ingredients, apart from the neutral oil, into a food processor and blitz for a few minutes until you have a smooth mixture. If you don’t have a food processor, you can use chicken mince and mix all the ingredients together in a bowl. • None Heat the oil in a large non-stick frying pan over a medium–high heat. Add the meatballs and cook for 3–4 minutes on two sides until golden. • None Add the coconut milk, fish sauce, siracha and lime juice to the pan.

Preheat the oven to 220C/200C Fan/Gas 7. Put the peppers, tomatoes and garlic cloves into a roasting dish. Sprinkle over half the chipotle chilli flakes and drizzle over the olive oil. Season with salt and pepper and toss to coat. Roast in the oven for 30–35 minutes until tender and lightly charred around the edges. Meanwhile, bring a large saucepan of salted water to the boil. When the vegetables have 10 minutes left, cook the pasta according to the packet instructions or until al dente.
