Serves: 42 sheets bacon ribs, cut into 3 pieces1 onion, halved2 garlic cloves, chopped2 sprig thyme100ml dark soy sauce (50ml +50ml)2 tbsp Korean gochujang paste ( 1+1)800ml vegetable stock3 tbsp. honey1 tbsp. sesame oil2 tbsp Korean style sauceSide¼ green cabbage, shredded1 carrot, shred1 shallot, sliced1 tbsp Korean style sauce ( or gochujang)To serve4 tbsp Peanut Rayu, (peanut and chilli oil) - optional4 tbsp. Coriander leaves2 lime, quarteredPlace the bacon sheet pieces on a large saucepan.
