To make the pancakes put all the ingredients in a blender and blend until smooth. Set aside and allow to rest for 5–10 minutes. Heat a flat, non-stick frying pan on medium heat. Pour a ladle of batter into the centre of the pan. Wait for 2–3 minutes until the top of the pancake begins to bubble and the edges look set. Using a spatula, flip the pancake over and cook for another 2–3 minutes, until both sides are golden and the pancake has risen.

Preheat the oven to 220C/200C Fan/Gas 7Put the potatoes in a saucepan and cover with cold salted water. The water should taste like sea water. Bring to the boil and cook the potatoes for 8–10 minutes, or until softened but still holding their shape. Drain in a colander and leave for 10 minutes to steam dry. Put the cooked potatoes onto a baking tray and carefully squash flat using the flat bottom of a sturdy water glass. Drizzle over the olive oil and season with salt and pepper.

To make the coleslaw. Put the cabbage and carrot in a colander. Mix in the salt and set over a bowl. Leave to stand in the colander for at least half an hour to allow the salt to draw out the excess liquid. Meanwhile, marinate the prawns. In a large bowl mix the ancho chilli paste, olive oil, chipotle paste, cocoa, sugar and lime juice and zest. Add the prawns and stir to coat evenly in the marinade. Leave for at least half an hour.

There’s mounting evidence that a person’s diet can impact their endometriosis symptoms. One study says improving gut bacteria diversity – via diet – could provide some relief for those with endometriosis. While further research is required to find out exactly what could help, the same study flags probiotics, wholegrains, fruits and vegetables as being beneficial to easing endometriosis symptoms, all of which are regarded as positive for improving gut health.

This tall and fluffy style of pancake is known for its jiggly appearance, soft and airy texture inside and slightly crispy exterior. These guys are larger and thicker than traditional pancakes and there are entire cafés dedicated to them. With such a buzz around them – one video of them has 19 million views – I was really excited about this recipe. The secret to making them is to whisk egg whites to stiff peaks, and then gently fold (you don’t want to knock out the air) into your pancake batter.

Place the chicken in a bowl, add the salt and white pepper and dust with the cornflour. Mix well to coat, then set aside. To make the curry sauce, whisk together all the ingredients in a jug, then set aside. Heat a wok over a high heat until smoking. Add the rapeseed oil and give it a swirl. Add the garlic, ginger, chilli and onion and stir-fry for a few seconds to release their aroma. Add the chicken and let the chunks sit for 10 seconds to sear and brown, then flip them over.
