    One of my favorite ways to make fatteh is this easy-to-put-together eggplant version, which is lighter in taste and faster to make, as I put my air fryer to use. It has different textures from the soft eggplant to the crunchy nuts and pita bread. The layers of spiced ground beef and the tangy yogurt drizzle are such a delight that round out the dish. Each of the components is done ahead of time and this fatteh is assembled quickly at the time of serving, so it's a great make-ahead dish.

    Toum, which translates literally to "garlic" in Arabic, is one of my most popular recipes and is naturally vegan. This is the kind of condiment you ask for an extra of at your local shawarma restaurant and use to dip your sandwich and fries into. It is so much cheaper to make at home and great to have on hand in your fridge for marinades, sautéing and even salad dressings. It skips the need to mince garlic for anything that requires it. Try to use the freshest garlic you can find.

    There is nothing better in this world than a fresh, crispy potato. It is even better when coated in a garlicky herby salsa. Batata harra translates literally to "spicy potatoes" and is a well-known mezze that is usually served as a platter for guests. Traditionally, these cubed potatoes are deep-fried, but I love to air fry them, as it is less messy and cuts down on the oil. Alternatively, you can just as easily oven roast them.
