Melt the butter and olive oil in a large frying pan over a medium heat. Add the onion, season with salt and pepper and reduce the heat to medium–low. Cook for about 5 minutes, stirring occasionally, until softened. Add the garlic and chilli flakes and cook, stirring frequently, for 1 minute. Turn the heat up to medium, add the tomato purée and season with salt and pepper. Cook for about 5 minutes, stirring frequently, until the tomato purée begins to darken and caramelise.
