Preheat the oven to 160C/140C Fan/Gas 3, or get a slow cooker ready. To make the pulled beef, heat the oil in a large, flameproof casserole or deep sauté pan over a high heat. Sear the beef in batches, making sure it's browned evenly on all sides. Remove the pieces to a paper-lined plate whilst you cook the rest. Pour the stock into the pan, along with the remaining pulled beef ingredients, seasoning generously with salt and pepper. Mix together, then return the browned meat to the pan.

Cook the pasta in boiling salted water according to the packet instructions until al dente. Meanwhile, heat the olive oil in a frying pan over a medium heat. Add the garlic and chilli flakes (if using) and cook, stirring, for 1 minute. Add the spinach and cook for 2–3 minutes, stirring frequently, until wilted. Add the mascarpone, cream and nutmeg and season generously with salt and pepper. Bring to a simmer then remove the pan from the heat and stir in the Parmesan.

Squeeze the sausagemeat out of the skins and drop small pieces straight into a large, deep, non-stick frying pan, large wide-based saucepan or flame-proof casserole (it needs to be large enough to combine all the ingredients, including the pasta and water). Add a tablespoon of the oil and cook the sausagemeat for 3 minutes over a high heat, or until beginning to brown, stirring regularly.
