Though the World Latte Art Championship (WLAC) has taken place since 2005, the United States didn’t take part until just a few years ago—2022, to be exact. That year, Piyapat Lapteerawut, a veteran latte artist who goes by the nickname Flook, won the competition. The next year, he won again. In 2024, however, Flook finished second, ending his streak and leaving him wondering about his future in the competition.

In the first section of this two-part interview, we learned how Kay Cheon—who works as head of wholesale and education at California’s Dune Coffee Roasters—won the 2025 U.S. Barista Championship (USBC) last month in Raleigh, N.C., after several near-wins, including finishing second at the 2020 USBC and third in 2018 (his first year competing).

His initial Brewers Cup run was successful, as he placed well enough in the qualifier to earn his way to nationals, where he placed ninth at the 2023 U.S. Brewers Cup.

Diego Guartan never expected to take part in coffee competitions. In spring 2024, Diego was working at his job as head roaster at Chicago’s Big Shoulders Coffee when he encountered Eduardo Choza, who was in town for the U.S. Coffee Roasting Championship. Eduardo had asked Big Shoulders co-owner Tim Coonan if he could practice on the company’s Stronghold S7 machine—the same roaster used at the national competition—in advance of the event.
