Kitchen Projects

Kitchen Projects is a weekly newsletter created by me, Nicola Lamb, a pastry chef, recipe developer, and consultant based in London. Typically, the research and development phase in cooking is kept out of sight. On platforms like Instagram, we often only see the polished final dishes, without any insight into the fascinating process of experimentation that leads to them. Kitchen Projects aims to change that by offering you a behind-the-scenes perspective. This newsletter serves as both a helpful resource and a heartfelt tribute to the culinary arts, guiding you through the journey of mastering your ideal pastry.

Over on KP+, I’m sharing my recipe for sour cream cake doughnuts with black sesame citrus sugar.

I am allergic to celebrating my own birthday. I pretend it doesn’t exist and hope it passes without anyone noticing. I love nothing more than celebrating my friends and family, but my own? No thanks. However, I think I’ve just found a loophole. This week I looked at the calendar and realised that coming up in just a few days is the 1st birthday of SIFT, my debut book. And, shockingly, I couldn’t be more excited.

Hello hello hello! SO, I was definitely supposed to be taking a break from the newsletter this weekend but how could I not take a moment to celebrate the fact that SIFT, my debut book, is turning ONE in just a few days. The last year has been a wonderful journey, I really mean it when I say that the book’s success is in no small part thanks to you.
