    Preheat oven to 400° F. Spread cauliflower florets on a large rimmed baking sheet; drizzle with 1 Tablespoon olive oil, 1/4 teaspoon salt & 1/4 teaspoon pepper. Roast at 400° for 15-20 minutes. Drizzle tomatoes with 1 teaspoon olive oil and a sprinkle of salt & pepper. Roast at 400° for 7-8 minutes. Toast the almonds in a small skillet over medium-low heat for 4-6 minutes. Stir regularly and watch closely to prevent burning.
