My passion for cooking began in my childhood, leading me to culinary school and jobs in various upscale restaurants. However, when I welcomed my first child in 2007, I faced challenges in figuring out what to feed my little one. Place 2 inches of water in a steamer pot and bring to a boil. Cut top 1/4 and bottom stem off of large artichokes with a serrated knife. If leaves have prickly or barbed ends, trim them off with scissors. If you are using baby artichokes, remove some of the tough outer leaves, until you hit the pale green leaves (about 10-20 leaves). Trim off top and bottom stem of baby artichokes.

Cut each cheese stick into 4 even pieces making 24 pieces. Place the flour in a bowl. Whisk the eggs and 2 teaspoons of water in a separate bowl. Whisk the breadcrumbs or panko, Italian herbs and salt in a third bowl creating an assembly line. Dip cheese cube in flour and tap off to remove excess, then in the egg and finally into breadcrumb mixture throughly coating. Place in air fryer basket. Repeat with remaining cheese cubes.
