Hello! I'm Catherine, a mother of three kids aged 15, 13, and 7, an entrepreneur, and a cookbook author. My passion for cooking began in my childhood, leading me to culinary school and jobs in various upscale restaurants. However, when I welcomed my first child in 2007, I faced challenges in figuring out what to feed my little one. I looked high and low for a complete guide that would provide new parents with easy, healthy, and delicious recipes, along with tips on feeding their babies. To my surprise, I found out that such a resource was missing.

    Preheat oven to 425°F. Place the shrimp, half the garlic, half the lemon zest, 1 tablespoon olive oil and 1/2 teaspoon salt in a large bowl and toss to combine. Optional: for even more flavor sprinkle with 1/2 tsp cumin, seafood spice, Italian herbs or other favorite seasoning. Place the shrimp on a large sheet pan lined with parchment paper. Place vegetables in a large bowl and toss with remaining garlic, lemon zest, olive oil and salt. Toss to coat. Arrange the vegetables on the same baking sheet.

    Air Fryer Method:Mix the panko, salt and garlic powder in a bowl. Whisk the egg in a separate bowl. Place the flour in another bowl. Make an assembly line with the three bowls, first dipping the green beans into the flour, then the egg and finally into the bread crumb mixture, coating the beans evenly and repeating with the remainder of the beans. Set air fyrer to 400°F. Place the green beans in the air fryer basket in a single layer (work in batches if needed).

    Preheat your grill to medium/high heat. Place the vegetables on a baking sheet, liberally drizzle with oil, sprinkle with salt and pepper and toss with your hands to coat. When your grill is hot place the vegetables directly on the grill and cook, turning occasionally to create grill marks on each side. Asparagus will take a total of 3-4 minutes, onions, bell peppers, mushrooms and squash 4-5 minutes and corn 5-6 minutes or until fork tender and lightly charred.
