    1 INTRODUCTION IgE-mediated food allergy affects up to 10% of the population, particularly the younger age groups, who are also at higher risk of nutritional deficiencies as a consequence of unsupervised and unduly prolonged avoidance diets.1-3 Conversely, young children are also the age group with more opportunities for prevention and disease-modifying treatments, as their immune response is more plastic and more amenable to immunomodulation.

Recent work revealed sensitivity of diffusion-weighted MRI to glia morphological changes in response to inflammatory stimuli, opening up exciting possibilities to characterize inflammation in a variety of preclinical models of pathologies, the great majority of them available in mice.
