I was a little grumpy when I first started writing today. My personal laptop is in a phase of losing battery very quickly. The Genius bar says it should be working fine, but it took over 20 minute to open up this Substack draft. It’s at once humid (78%) and chilly, which is no one’s preferred weather. First amendment rights are in danger, as are many other rights.

Hi friends,I’m back in New York after an incredible trip to Sri Lanka with Earthfoam. We learned a lot and saw many parts of the absolutely beautiful country. I was so impressed with their operations and their commitment to fair trade (plus, it’s really cool to see how a mattress is made from trees, from the forest to the factory). We traveled with a great group and everyone on the Earthfoam team could not have been lovelier. Everyone who visited is already plotting a return trip.

Mushroom au poivre was suddenly everywhere. My husband was flipping through Bon Appétit and pointed it out to me, then sent me a New York Times Cooking post on Instagram. The message was clear: He wanted to eat mushroom au poivre. I found the Times has portobello and maitake versions on their site. All of these variations called for heavy cream, and so I pushed it to Christmas. Heavy cream is a holiday-only kind of ingredient in my life.

Call it the test kitchen–ification of food media. The dreaded pivots to video of the media business in the 2010s culminated in the runaway success of Bon Appétit’s Test Kitchen, where recipe developers were turned into online cooking superstars. Every regular viewer chose a favorite. This success imploded in 2020, as so many things did, when then–editor-in-chief Adam Rapoport was outed for racist behavior and Sohla El-Waylly opened up about pay disparities.

In 2025, I’m going to be leaning more into cultivating the conversations I want to see in the world. Between workshops and our weekly Salon chats, I’ve been really enjoying getting to know more of this international, extremely well-read, very politically engaged community—and am even becoming comfortable referring to it as such.
